Filipino Class with Chef Clinton Nuyda

December 5th, 2023 at 4:30 pm7:30 pm

We are elated to announce that Chef Clinton is coming back to the Provisions Kitchen! It’s been a few years and we have missed his incredible personality and passion for food. Just in time for the holidays, Chef Clinton will be teaching his favorite Filipino party dishes including Escabache (Pan Seared Mahi Mahi with Ginger Bell Pepper Sweet and Sour Sauce over Garlic Steamed Rice), Embutido (A Steamed Pork Meatloaf), and Banana Lumpia served with Ube Ice Cream. This will be both a hands-on and demonstration class ending with an incredible dinner. We are hoping his wife, Carla will also make an appearance!

Date/Time: Tuesday, December 5th, 4:30 – 7:30 pm

Age Requirement: 16 years or older

Location: The Monkeypod Jam, Provisions Kitchen in Lawai. The exact location will be shared after registering.

Chef Clinton Nuyda moved to the island of Kauai, Hawaii with over 25 years of culinary experience mostly, from the Greater Los Angeles Area. Clinton specializes in Asian, Italian, Mediterranean, and Spanish cuisine, and is known for his memorable steaks and flavorful sauces that suit any dish.

Born and raised in the Philippines, Clinton began his culinary journey cooking at his grandmother’s side. His family (including his influential grandmother) eventually moved to California where Clinton’s fine dining career took off. He worked in the kitchens of Chef Makoto Tanaka’s Mako restaurant in Beverly Hills, Chef Wolfgang Puck’s flagship Spago Beverly Hills, and Chef Suzanne Goin’s LA Tavern in Brentwood, among others. Clinton was handpicked by Chef Eric Klein for Maple Drive and later SW Steakhouse at the Wynn Hotel in Las Vegas. He moved back to the Philippines briefly where he was Head Chef at Grappa’s Ristorante in the busy Makati business district.

Upon returning to the United States, Clinton settled in Kaua’i where he impressed diners at Kauai Pasta Lihue, Eating House 1849 by Roy Yamaguchi (where he was listed by Hawaii Magazine among the top three chefs in the Best of Kauai 2019: Food and Drink: Chef category), The Cabana, and Lava Lava Beach Club, and The Tasting Room. He has also shared some of his cooking secrets during weekend cooking classes at Monkeypod Jam.

Clinton remains well in touch with his Filipino roots and makes a killer Chicken and Pork Adobo and Sinigang with Salmon. His wife says he makes the best Caesar Salad and Burgers. When Clinton is not in the kitchen, he plays music and builds ukuleles and guitars.
